Chocolate Quinoa Cake

When one of my favorite restaurants in Toronto changed their dessert menu and no longer served their delicious chocolate quinoa cake, I decided to take matters into my own hands and make my own chocolate quinoa cake. The quinoa replaces flour in the batter, which is excellent for anyone on a gluten-free diet. It has a different texture than regular cake of course, but still incredibly delicious! This cake also doesn't need to be iced with icing - it tastes impeccable without it! Honestly, chocolate quinoa cake might be one of my favorite cakes ever.
Ingredients:
 - 1 box of quinoa (and then 2 cups of cooked quinoa)
 - 4 eggs
 - 2/3 cup milk
 - 1 teaspoon vanilla extract
 - 3/4 cup melted butter
 - 1 1/2 cups granulated sugar
 - 1 cup unsweetened cocoa powder
 - 1 teaspoon baking powder
 - 1 teaspoon baking soda
 - 1 teaspoon salt
Preheat your oven to 350F. On the stovetop, cook your quinoa following the directions on the box. Let cool. quinoa In a blender, lightly mix the eggs, milk, and vanilla. egg mixture Next, add the cooked quinoa and melted butter. Puree until completely smooth. In a separate mixing bowl, add the sugar, cocoa powder, baking powder, baking soda, and salt. quinoa mixture Add the creamy quinoa mixture to the dry ingredients in the mixing bowl and mix until well blended and smooth. pouring mixture Pour the batter into a cake or cupcake pan. finished mixture Bake for 30 minutes (if the batter still appears loose after 30 minutes, it's okay. The cake hardens as it cools). Serve with whipped cream and a dusting of icing sugar on top! inside cake

    How much is one box of quinoa in grams? In the UK, it isn’t sold in boxes as far as I’m aware. It looks delicious!
