Bailey’s Cookies for St. Paddy’s Day

There comes a time once a year where everyone dresses up in green, attends parades, and begins to drink shortly after the sun comes up - Saint Patrick's Day! This year, Saint Patrick's Day falls on a weekday so drinking at work could be highly frowned upon but why not put a little Bailey's in some cookies to get a head start on the celebrations? I have to admit that every time I mention Bailey's, I immediately begin to think of Old Gregg. "Have you ever drunk Bailey's from a shoe?" (In case some of you have no idea what I am talking about, here's the Youtube clip)
Ingredients:
 - 8 tablespoons butter
 - 1/2 cup granulated sugar
 - 1/2 cup dark brown sugar
 - 1 egg
 - 1 teaspoon vanilla extract
 - 1/2 cup + 2 tablespoons Bailey's Irish Cream
 - 2 cups flour
 - 1/2 teaspoon baking powder
 - 1/2 teaspoon baking soda
 - 1/2 teaspoon salt
 - 3/4 cup graham cracker crumbs
 - green food coloring
 - 1 bag white chocolate chips
St. Paddy's Cookies Jumpers & Jasmine Preheat your oven to 350F. In a mixing bowl, beat the sugars and butter together until fluffy. Next, add the egg, vanilla, and Bailey's. Processed with VSCOcam with a1 preset In another bowl, mix the flour, baking powder, baking soda, and salt together. Slowly add the mixture to the egg mixture and mix together. Processed with VSCOcam with a1 preset Next, add the graham cracker crumbs (my secret ingredient!). Processed with VSCOcam with a1 preset Add about 20 -30 drops of green food coloring into the cookie dough and fold in the color until the dough is completely green. Add the white chocolate chips in after the dough is covered in green since you want the chips to stay white. Processed with VSCOcam with a1 preset The cookies puff up a bit when they bake, so be sure to keep the size of the cookies on the baking sheet to be flat and small. Bake for 10 -12 minutes.     I loved this recipe! Never thought about green cookies and it’s a great ideia. I suppose I can find all those ingredients here in Brazil, if I find, I’ll definitely try to do 🙂
