With the holidays fast approaching, Santa is not the only one wanting to eat some delicious cookies! By popular demand, I was asked to share some of my favorite holiday cookie recipes. I think one of my favorite cookies I have ever made is perfect for the holidays – Oreo Peppermint Cookies! They are not difficult to make, either. Leave these for Santa, and he may keep you on the “Nice” list forever!
Ingredients: - 2 sticks unsalted butter - 1 cup brown sugar - 3/4 cup grated peppermint candy canes - 1 egg - 1 egg yolk - 1 teaspoon vanilla extract - 2 cups flour - 1/2 cup Oreo baking crumbs (or you can create your own from Oreo cookies) - 1 teaspoon salt - 1 teaspoon baking powder - 2 cups white chocolate chips
Preheat the oven to 325F. Line baking/cookie sheets with parchment paper. To make granulated candy cane powder, put candy canes in a food processor and grind until the texture is like sugar. You need 1 cup of granulated candy cane powder.
In a bowl, mix together the butter, sugar, and granulated candy cane powder. One at a time, add the egg, egg yolk, and vanilla. Set aside.
In a separate bowl, combine the flour, Oreo crumbs, salt, baking powder, and baking soda.
Add the flour mixture to the egg mixture and mix thoroughly. Scrape down the sides with a spatula to make sure everything is mixed together. Add in the white chocolate chips and mix.
Use an ice cream scoop to place the cookie dough on the parchment paper.
Bake for 12-15 min.
Let cool for 5-10 minutes. Serve with a glass of milk and enjoy!
