Really Easy & Simple Shrimp Tacos

Since I became a pescetarian last year (a vegetarian that still eats fish), I wanted to still be able to enjoy some of my favorite foods and cuisines even if I no longer ate meat. One popular food that I had never really tried before was fish tacos. Boy had I been missing out! But I am not always in the mood for white fish, which is usually what fish taco recipes call for. But I LOVE shrimp! So I came up with an easy, simple way to make shrimp tacos - perfect for a weeknight! All you'll really need is some shrimp, 1 box of a soft taco kit (my favorite is Old El Paso), 1 cup water, and your favorite taco toppings. Processed with VSCOcam with h3 presetFirst, I preheat my oven to 350F. Then I place my soft tortillas wrapped in aluminum foil in the oven and let them heat up for 10 minutes. Then I cut my shrimp into very small, bite size pieces.

Next I heat a skillet and mix the shrimp, taco seasoning mix, and 3/4 - 1 cup water.

I let the liquid boil for about 3-5 minutes. It will continue to thicken. Remember to keep stirring. Processed with VSCOcam with h3 preset Once your taco filling is complete and your tortillas are perfectly warm, it's time to finalize your shrimp tacos with some toppings! My favorites are cheddar cheese, Jack cheese, shredded lettuce, and sour cream. And I always eat my tacos with a fork at hand in case anything slips out! Processed with VSCOcam with s2 preset
